A Lamington is a sponge cake of Australian origin in the shape of a cuboid, coated in a layer of traditional chocolate icing then desiccated coconut.
Most accounts of the creation of the Lamington agree it was named after Lord Lamington, who served as Governorof Queensland from 1896 to 1901. One account claims the dessert resembled the homborg hats favoured by Lord Lamington.
